As the leaves begin to fall and the weather has turned chilly, I start spicing things up in the kitchen. I wanted a cookie that wasn’t too sweet and had the right amount of spice in them. I also wanted something that my kids would want to eat. It didn’t take too long before I got my  Spiced Sugar Cookies perfect.  The cookies are packed with fall flavours, but you could eat these all year round if you feel so inclined.

spiced sugar cookiesI love a good cut out cookie recipe, and these cookies are that. You can use just about any shape of cutter for these cookies. Though the cookies do spread a little so they can lose some definition. I love just about any spice I can get my hands on. So for this recipe, I use a combination of cinnamon, ginger, all-spice, and cardamom. I know that not everyone likes these spices, so feel free to change out or leave out some of the spices to make a perfect cookie for you.

This recipe calls for cinnamon sugar or just sugar to be sprinkled on the top of the cookies to give it just a touch more sweetness and to add some texture. If you are interested in decorating using Royal Icing, then you can skip the sugaring step and then decorate once the cookies have cooled completely. This cookie recipe is very simple, and it turns out very nice. All three of my kids devour them every time I make them, so I hope you and your families like them as much as we do. If you are interested in making Royal Icing you will need Meringue Powder since it makes it so much easier then using just egg whites. Good Luck and Happy Baking.

With fall upon us, we crave the warmth provided by our favourite spices. These Spiced Sugar Cookies are the perfect combination of spice and sweetness.

Ingredients

  • 3/4 cup + 1 tbsp (194g) room temperature butter
  • 1 cup (210g) sugar
  • 3 tbsp (40 g) brown sugar
  • 1 egg
  • 2 tbsp milk
  • 2 tsp vanilla
  • 3 cups (485g) flour
  • 1/4 tsp salt
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp all-spice
  • 1/4 tsp cardamom
  • cinnamon sugar for topping

Instructions

Cream together in a large bowl, the butter and sugars until totally incorporated.

Add in egg, milk, and vanilla and continue mixing.

In a medium bowl, whisk together flour, salt, baking powder, and spices.

Add half of the flour to the large bowl and continue to mix until the flour is absorbed.

Add a little bit more of the flour at a time until it is too thick to mix.

Knead in the remaining flour by hand. All the flour should be incorporated into the dough.

Cut dough into two pieces, flatten each into a disk, wrap in plastic wrap and refrigerate for at least an hour.

Once the dough is ready heat the oven to 375℉

Take out one of the disks of dough and unwrap it. Place it onto a lightly floured surface and dust the top with a little more flour.

Roll dough out until it is about 1 cm or 1/4 inches thick

Cut out your cookies and place them on a cookie sheet lined with parchment paper.

Repeat process with the remaining dough.

Brush the top of the cookies with a little milk and sprinkle with a bit of sugar or cinnamon sugar

Bake for 10-12 minutes*

Let the cookies cool completely before eating.

Keep in an airtight container for a week. You can freeze the baked cookies in an airtight container for a month or two

Notes

*These cookies don't get very dark so you should watch the bottom edge of the cookies for browning.
