I love baking for Christmas and fudge is one of those items that I usually only make around this time of year. I enjoy eating fudge, but because of its sweetness, I tend to limit it to the Christmas season. Most people think that it’s hard to make, but it isn’t that difficult. My Maple Pecan Fudge recipe is delicious and easy to make. It is definitely a crowd-pleaser at any Christmas event or any other time of the year.
Fudge and Candy:
I’m sure you can tell by the sweet level of the fudge that it is a type of candy. It is made by boiling sugar until enough of the water is cooked out of it to thicken it. Depending on the kind of candy you are trying to make dictates the temperature you boil the sugar too. To make fudge easily, without complications, you will need to get a reasonably good candy thermometer; you can pick them up easily without spending a lot of money. You will be boiling the sugar to the softball stage (235℉) to make fudge, if you cook it too much, the fudge will be too hard, or if you don’t boil it enough, it will be soft.
Fudge Prep:
You will want to use a larger pot then you think you will need, it bubbles up pretty high. Once you have reached the proper temperature, you don’t want it to go over. To prevent this, you can dip the bottom of the pot in room temperature water or pour the mixture into a bowl. You want to make sure that whatever you do, it is at room temperature. If you use cold water or a chilled bowl, it could cause crystals to form, and this will give your fudge a grainy texture. You also don’t want to scrape down the sides of the pot because sugar crystals may have formed on the bottom or sides of the pot.
I would also like to point out that there are many different types of maple syrup that you can get, and they all vary in flavour. The kind I use for baking is one labelled to be “very dark, strong taste” this gives your baked goods lots of flavour. My Maple Pecan Fudge is full of flavour and incredibly delicious. Maple Pecan Fudge
Ingredients
- 1 cup (200g) sugar
- 1 cup (215g) brown sugar
- 1 cup heavy cream
- 1 tbsp. butter
- 1/3 cup (70g) maple syrup
- 1 tbsp vanilla extract
- 1/2 cup+ 2 tbsp icing sugar
- 1/2 cup of chopped pecans
Instructions
In a large pot, add sugars, heavy cream, butter, and maple syrup. Heat over medium-low heat until the butter has melted.
Increase heat to medium-high and insert a candy thermometer.
Continue to boil sugar mixture until it reaches 235℉ and then remove from heat.
Pour mixture into a mixing bowl and let cool until the temperature reaches about 180℉
Add in the vanilla extract and the icing sugar. Mix until the fudge reaches 110℉. The fudge should be pretty thick at this time if it is still loose sift in 2 tbsp icing sugar.
Stir in chopped nuts and pour into a greased 8x8 pan lined with parchment.
Place into the refrigerator for about an hour or overnight before slicing.*
Notes
* This fudge is very sweet so I slice it into 1/2 inch cubes. You can slice them into whatever size suits your taste.
